Coffee made with innovative processing methods has arrived from Colombia's highly-regarded Milan Farm and is being used by finalists in the World Barista Championship.

Milan Farm is located in the Andes mountains of Risaralda province, with hot springs and volcanic soil stretching from 1,400 to 1,800 meters. We produce various micro-lots, as well as crops such as plantains, corn, and beans.

The coffee processing method introduced here involves picking cherries, sorting them, pulping, and then transferring them to tanks for fermentation as parchment coffee. Nitrogen and yeast are added to the tanks, and fermentation occurs for 4 days under strict temperature control. The addition of nitrogen further accelerates the fermentation. The coffee is then washed with water and naturally dried for approximately 20 to 30 days.

This coffee offers a multitude of fruit flavors that will revolutionize your perception of coffee. It boasts notes of honeydew melon, golden kiwi, and watermelon, with a sweet and juicy profile reminiscent of a fruit basket. Its flavors evolve with changes in temperature and aging.
