Milan Farm is synonymous with the fermentation process, which is called "cultivation".
These passionate producers are constantly taking on new challenges, expanding the value and potential of coffee through the fermentation process, beyond the boundaries of variety and other factors.
The coffee we received this time also went through a similar process. "Cultivation" refers to the fermentation process, which is fermentation in an environment full of specific bacteria (called fermentation agents), which changes the flavor of the coffee.
A starter culture is a yeast extracted from fermented fruit (usually pineapple). When fermenting coffee cherries, the type, amount, and fermentation time of the cherries can be adjusted to achieve the desired flavor.
Unique flavors like grape and cotton candy truly reflect the efforts and hard work of the producers.
