Finca V&G San Juanillo, located in Costa Rica's Naranjo region, was founded in 2007 by agronomist Tomas Gutierrez and engineer Allan Vargas. Embracing the vision of "creating an ideal coffee farm through science and sustainability," they established a model farm that combines modern agricultural techniques with the principles of symbiosis with nature.
The farm bases its cultivation management on soil and leaf analysis, applying fertilizer three times a year to precisely replenish required nutrients. To address climate change, they select hybrid varieties such as H1, H17, and Marsellesa, which are highly resistant and have excellent flavor. They also continuously experiment with foliar fertilization and biostimulants. Their meticulous management and innovation have steadily improved coffee quality, even earning top marks in the Cup of Excellence.
They use the Red Honey process, further refined into the Dark Honey Process. After harvest, the berries are left to rest for 24 hours to promote fermentation, retaining some of the pulp and mucilage to enhance the sweetness. After a brief ground drying period, they are then sun-dried on elevated racks for 15 days to complete the aging process. This process results in a coffee with a rich, fruity sweetness and a smooth, full-bodied flavor, accompanied by a delicate brown sugar aroma and a long, lingering finish.
