While the "Chiroso" variety may not be as widely known as other common coffee varieties, it possesses a very unique flavor profile. Primarily grown in Colombia, especially in the Huila region, it is renowned for its distinctive flavor profile. It boasts aromas of blueberry, grape, lime, cocoa, and cherry, with a bright overall acidity and a rich, full-bodied, and delicate flavor profile, making it highly praised by enthusiasts.

Arsenio Muñoz is a coffee expert with a passion for agriculture and a calm, collected personality. His farm, "Los Cauchos," is located in San Agustin, surrounded by the majestic Andes Mountains and thousands of coffee trees. When the mountain mist descends at dusk, the air is filled with a thin fog, creating a dreamlike and enchanting atmosphere, like a sky city floating in a sea of ​​clouds.

Arsenio beans are carefully selected for their high quality after they reach the ideal sweetness level. Following this initial processing, the red beans are placed in sealed fermentation tanks along with sugar-rich sugarcane and oranges (all sourced from the farm itself). The mixture is stirred evenly every 12 hours to maintain fermentation stability, a process that takes approximately 4–5 days. Afterward, they undergo over 25 days of slow sun-drying to allow the overall flavors to meld perfectly.

The precisely controlled fermentation process allows the flavors of "anaerobic fermentation" to be released perfectly, resulting in a vibrant yet subtle fruity aroma. When ground, you can experience a rich bouquet of berries and tropical fruits. The taste is refreshing and juicy, with a gorgeous burst of fruity sweetness that lingers in the mouth.

All the coffee beans we sell and blend have a SCAA rating of 80 or above, which is the same quality level of specialty coffee beans, accounting for only 5% of the total coffee beans produced and distributed globally.
