This coffee comes from the world-renowned Chelchele region. Its fermented flavor is not strong, but rather highlights the natural sweetness of cherries.
Chelchele is located in the Gedeb region of the Gedeo Zone in southern Ethiopia.
Since its inception, Townsfolk Coffee has sourced large quantities of coffee from this region every year; in recent years, the quality of coffee produced here has been particularly outstanding, making it a popular region for global buyers to compete for.
This batch of coffee consists of coffee cherries grown by smallholder farmers in the Chelchele region and is processed and refined at the Duramazoria Washing Station .
The " Anaerobic Natural " process involves carefully selecting only fully ripe cherries and then sealing them in special containers.
The container is equipped with a valve to release oxygen and carbon dioxide produced during fermentation. This batch of coffee fermented for 72 hours in a sealed environment.
Afterward, the cherries are removed and placed on African-style elevated beds for a drying process that takes about 21 days .
During the drying process, staff will constantly turn the cherries over and cover them with waterproof cloths at night or when it rains to prevent them from getting damp and moldy, thus ensuring stable quality and pure flavor.
