Located in the highlands of the Oromia region of east-central Ethiopia, at an altitude of over 1,900 meters, the Mewa Washing Station in West Arsi is renowned for its high-quality coffee. The region's coffee is renowned for its unique flavor, thanks to its fertile soil, humid climate, and cool temperatures. Producers are primarily smallholders who cultivate and harvest coffee by hand using traditional methods. Farms typically range in size from two to nine hectares, and most are family-run. They also adhere to sustainable farming practices that harmonize with nature, minimizing the use of pesticides. The harvested beans are collected at the washing station and meticulously processed before finishing. This coffee is a classic washed coffee, carefully air-dried in the shade for three weeks after washing. West Arsi has long been a renowned coffee-producing area in the region, winning numerous awards at the Ethiopian Coffee Cup of Excellence competition in recent years.

This is a naturally processed version of our recently sold 233 Ethiopian Mewa Washed Coffee. The extraction process still retains its elegant aroma and honey-like sweetness.

I wanted to achieve a sweeter profile than a washed coffee, so I roasted the beans about 3 degrees higher at the end of the roast. Because the beans have a higher moisture content, they heat up more slowly in the first half of the roast, so I roasted them slightly higher and maintained a steady temperature to ensure adequate heat during the drying phase. (With the sample roast, I worried that the temperature wouldn't rise at all initially… Even if you measure and predict, you never know until the roast is complete.)

During extraction, a gorgeous floral aroma reminiscent of Muscat grapes emerges.

Upon entering the mouth, the distinctive red fruit flavors of natural coffee intertwine with sweet notes of honey and almonds. A hint of pear also emerges, reminiscent of a rich black tea.
