Sale price HK$220.00

Marysabel Caballero and Moises Herrera (hereinafter referred to as Marysabel and Moises) are internationally renowned top coffee producers in Honduras. Born into a coffee-farming family, Marysabel, after graduating from university abroad, returned to her hometown to cultivate coffee despite her father's objections, longing for the coffee plantations of her childhood. Moises, from Guatemala, was transferred to Honduras for work and met her in Chinacla while researching coffee-growing regions. After their marriage, they inherited her father's land and began managing the coffee plantation together.

Their farms are spread across four main regions: Chinacla, Santa Ana, San Jose, and Mogola, encompassing approximately fifty plots. They operate their own wet and dry processing plants, controlling the entire production process from harvesting to shipment. During processing, the coffee cherries are peeled, washed, fermented, and precisely sorted, before being sun-dried on elevated African beds for about two weeks. In recent years, they have introduced a sorting system combining weight and color to improve efficiency and conserve water.

Due to the high humidity and difficulty of drying in the area, Moises has installed multiple mechanical dryers to stabilize quality and extend the shelf life of their coffee. They also prioritize soil health, using a mixture of organic fertilizers and cultivating crops such as oranges, avocados, and bananas to maintain biodiversity. During harvesting, they employ a double-bag system, selecting only fully ripe fruit and paying above-average wages. Thanks to this thorough quality management, the Caballero couple won first place in the Honduras Coffee Excellence Cup twice, in 2016 and 2018.

This batch of beans has a distinct sweetness and smooth texture, with a pleasant flavor reminiscent of dried fruit and citrus marmalade.
It retains Mr. Caballero's consistently calm style, while exuding a rich and mellow flavor, perfect for this increasingly cool season—a cup of coffee that can make people feel at ease and relaxed.
