After removing impurities from the coffee cherries, the skin is removed.
The coffee beans and fermentation broth are then placed in a sealed container for 150 hours of fermentation.
The drying process is divided into two stages: first, sun-drying for 2 to 3 days, and then air-drying in a cool place for 12 to 13 days until the ideal moisture content is reached.
The finished product has a rich sweetness like a nectarine and exudes a gorgeous fragrance reminiscent of osmanthus, leaving a lingering aftertaste.
