A small batch of coffee that has undergone a special fermentation process was purchased from the Villa Anthonella farm in Huila Province, Colombia.

Grown by young producer Emerson Rojas, this coffee was finished under the supervision of a local cupping champion and has a perfect balance of transparency and tropical aromas.

The variety used is "Orange Bourbon", a rare variety that has attracted much attention in recent years. Bourbon variety. In addition to its inherent floral aroma and bright flavor, this process further enhances its charm.

First, the cherries are wet fermented to give them a tropical fruit flavor. Afterwards, the pulp is removed, leaving the pectin, which is then fermented with passion fruit juice and passion flower for 48 hours. This results in an aromatic and delicate aroma that envelops the entire cup of coffee.

You can taste the soft sweetness and floral aftertaste typical of orange bourbon, as well as the juicy taste reminiscent of tropical fruits.
