After removing impurities from the coffee cherries, the skin is removed.
Then, it was placed in a sealed tank along with the fermentation broth for 150 hours of fermentation.
The drying process is divided into two stages: first, sun-drying for 2 to 3 days, and then drying in a cool place for 12 to 13 days until the ideal moisture content is reached.
The finished product exhibits a gentle tartness reminiscent of lime juice and a refreshing minty aroma, complemented by a syrupy sweetness, resulting in distinct layers of flavor.
