[What is wine coffee]
Wine coffee is "wine-flavored coffee beans" made by soaking green coffee beans in alcohol, transferring the flavor of alcohol to the green beans, and then roasting them.
[About the brewery]
The brewer is Kumazawa Sake Brewing Co., Ltd. founded in 1896. With the motto "Good sake makes Japan", as the only remaining brewery in Shonan, it plays the role of a local cultural center.
Our business is not limited to sake brewing which we have been doing since our establishment. We are committed to various activities that stimulate "place and people" such as beer and distilled spirits production, restaurant and bakery development and management, event cooperation, and sake rice projects.
[Alcohol used]
"Day Dog", a craft gin produced by Kumazawa Shuzo, is ordinary. The name comes from the characteristics of the land that preserves many Tengu legends.
This product will be released in 2021. This is the first distilled liquor produced by Kumazawa Sake Brewery in 100 years.
Of note is the brewery’s unique manufacturing method. First, they brew rice wine using "kasutori shochu" (rice wine made by re-fermenting ginjo sake). As a spice, only juniper berries, which have a woody bitterness and sweetness, are cured and distilled in three steps.
[The taste of wine and coffee]
The botanical ingredient is "Day Dog," and although it's simply made from juniper berries, the special preparation method gives it a rich flavor. Some people say that you can feel the subtle sweetness of Kasutori shochu.
A delicate balance of daytime dog and coffee creates a refreshing harmony.
