Its name is "Apricot Punch".
The process is very complex, let me explain it step by step:
① First, carefully select fully ripe coffee cherries, heat them along with the pulp, and then quickly cool them to 10°C. (Thermal Shock)
② Next, remove the pulp and carry out an oxidation treatment (aerobic fermentation) for 10-12 hours.
③ Then transfer to a bioreactor, add starter culture, yeast, and fully ripe fruits such as apricots, and seal for treatment.
Nitrogen gas is injected into the tank to create an oxygen-free environment.
During this process, yeast uses sugar as an energy source for fermentation, so watermelon or other high-sugar fruit juice is added to promote fermentation.
Bioreactors strictly control conditions such as temperature, pH, and sugar content to create a flavor that is precisely targeted.
The latest and most innovative technologies, such as "thermal shock treatment," "oxidative fermentation," "anaerobic fermentation," "nitrogen filling," "cultivation," "immersion flavor," and "yeast fermentation," are combined to create a truly ultramodern processing method!
