The process is very complex, let me explain it step by step:
① First, carefully select fully ripe coffee cherries, heat them along with the pulp, and then quickly cool them to 10°C. (Thermal Shock)
② Next, remove the pulp and carry out an oxidation treatment (aerobic fermentation) for 10-12 hours.
③ Then transfer to a bioreactor, add starter culture, yeast, and fully ripe fruits such as apricots, and seal for treatment.
Nitrogen gas is injected into the tank to create an oxygen-free environment.
During this process, yeast uses sugar as an energy source for fermentation, so watermelon or other high-sugar fruit juice is added to promote fermentation.
Bioreactors strictly control conditions such as temperature, pH, and sugar content to create a flavor that is precisely targeted.

The latest and most innovative technologies, such as "thermal shock treatment," "oxidative fermentation," "anaerobic fermentation," "nitrogen filling," "cultivation," "immersion flavor," and "yeast fermentation," are combined to create a truly ultramodern processing method!

In terms of flavor, it's bursting with fruity aroma and has a great rhythm!
It has a sweetness like apricot and yellow peach syrup, and a rich, sweet floral fragrance like osmanthus, which is amazing!

About Days Coffee Roaster

Days Coffee Roaster, located in Meike-no-Kami in Chuo-ku, Niigata City, Japan, is a family-run roastery beloved by locals and specialty coffee enthusiasts. Owner Mr. Shirai worked in coffee shops since high school, honing his skills for many years before establishing his brand in his hometown, hoping to connect people and share passion and stories through a cup of coffee.

The shop's name, "Days," signifies "daily life," symbolizing how coffee integrates into life and becomes a daily companion. The shop uses a direct flame roaster, which directly heats the beans to bring out their fruity aromas and sweetness. Mr. Shirai pursues transparency and balance in flavor, striving to roast coffee that is both distinctive and smooth, easy to drink.

The shop always carries over twenty single-origin coffee beans, ranging from the fruity aromas of Ethiopia to the robust flavors of Central and South America, all available for tasting. The space is simple and warm, with outdoor seating and parking, creating a relaxed and comfortable atmosphere. In addition to selling coffee, Days Coffee Roaster regularly hosts cupping and roasting workshops, promoting coffee culture exchange in Niigata. It received a two-star rating in the Central Japan region from the *TYPICA GUIDE 2024*, showcasing its quality and philosophy.
