a coffee with an extremely distinctive flavor and complex processing. It is produced by Luis Marcelino, the founder of Aroma Nativo, in collaboration with local farmers, utilizing innovative processing methods to create "perfume-like" aromatic layers.
Aroma Nativo's processing techniques are exceptionally rigorous. This Hydro Natural combines anaerobic and repulped methods:

First Fermentation: Carefully selected ripe coffee cherries are placed in an anaerobic environment for initial fermentation.

Second Fermentation: After depulping, specific natural bacteria and yeast are added for a second fermentation (double fermentation), with the aim of maximizing floral and fruity aromas and sweetness.

Stabilization: After drying, the beans enter a temperature-controlled room for a stabilization period of 2.5 to 3 months to ensure flavor maturation.
This coffee is part of the Veci Project, an initiative launched by Luis Marcelino in 2022 to assist farmers with excellent agricultural techniques but lacking processing equipment. Aroma Nativo purchases these high-quality coffee cherries at a premium and utilizes its professional, laboratory-grade equipment for precise fermentation, creating an "experimental" yet balanced flavor.
