When Milan Farm is mentioned, its most representative feature is undoubtedly the fermentation process called "Culturing". These passionate coffee producers have broken the traditional varietal framework, expanding the value and possibilities of coffee through unique fermentation techniques, and are continuously experimenting with new approaches.

The batch that has just arrived also uses this processing method. "Culturing" refers to a fermentation process that utilizes an environment filled with specific microbial communities, known as "Starter Cultures," to ferment coffee, thereby imparting new flavor variations to the product.

The starter cultures are primarily yeasts extracted after fermenting fruit bases such as pineapple. When fermenting coffee cherries, producers carefully adjust the type, quantity, and fermentation time of these cultures to precisely sculpt the desired flavor profile.

This coffee has a distinctive flavor profile reminiscent of lychee, combined with the vibrant notes of passion fruit and orange. It allows everyone to personally experience the dedication and effort of the producers through a single cup of coffee.

GLITCH COFFEE & ROASTERS' main branch is located in Jimbocho, an area lined with old bookstores and traditional cafes. Amidst this rich literary atmosphere, the shop's simple, rustic style, created solely through wood and metal decor, draws everyone in. Although the shop's space is not large, and half of it is occupied by a massive coffee roaster, it is precisely this arrangement that conveys the owner's dedication to coffee roasting.
The owner of GLITCH COFFEE, Mr. Kiyokazu Suzuki, is both a barista and a roaster, and was the 2014 AeroPress Japan Champion. To bring out the full fruity flavors and layers of the beans, he not only uses high-quality coffee beans cultivated by highly reputable farms but also deliberately breaks with Japan's traditional dark roasting. He insists on using his unique light roasting method to ensure customers taste coffee with delicate and distinctive flavors, allowing them to settle down and enjoy their coffee time in a literary atmosphere. It's no wonder that within just a few years of opening, the shop was selected as one of The Big7 Travel's Top 50 Coffee Shops in Asia in 2019.
