The brand name "LEAVES" reflects our desire to grow while constantly trying new things, just as a leaf, having fulfilled its role, falls from a branch and nourishes new leaves.
Yasuo Ishii, representative and roaster of LEAVES COFFEE ROASTERS, is a former professional boxer born in Fukagawa, Koto-ku, Tokyo. He has 20 years of experience in the restaurant industry since his youth, including restaurant management, instruction, and consulting. In 2010, a cup of coffee given to him by an acquaintance opened up a new world. In 2016, he opened LEAVES COFFEE APARTMENT. In January 2019, he opened a roasting facility called ROASTERS. Currently, three machines are in operation for production roasting: Probat UG-15, Giesen W6A, and Stronghold S7X. He taught himself to be a barista and roaster, developing his own unique style. In 2021 and 2022, he was selected by the American coffee media "Sprudge" as a renowned roaster for two consecutive years, a first in Japan.
To balance roasting and store operations, the roasting facility is open three days a week: Saturday, Sunday, and Monday. By maximizing the potential of the ingredients, our goal is to create a clean "beverage" with a pleasing balance of acidity and sweetness.
