About production and processing (washing)
This is a production process in which the pulp is removed from the coffee beans by a machine and then soaked in water for about 48 hours so that the coffee beans are covered with mucilage. During soaking, a partially anaerobic process begins and the slime is broken down by the action of bacteria. Once the process is complete, the coffee beans are removed from the water and dried on long racks called "African beds" for approximately 15 days.
