LEAVES COFFEE ROASTERS

The brand name "LEAVES" reflects our desire to grow while constantly trying new things, just as a leaf that has completed its role falls from a branch and becomes nourishment for new leaves.

Yasuo Ishii, representative and roaster of LEAVES COFFEE ROASTERS, was born in Fukagawa City, Koto-ku, Tokyo, to the former professional boxer. He has worked in the food and beverage industry for 20 years since his youth, gaining experience in restaurant management, guidance, and consulting. In 2010, a cup of coffee given to him by an acquaintance opened a new world for him. In 2016, he opened LEAVES COFFEE APARTMENT. In January 2019, he opened a roasting workshop called ROASTERS. Currently, three machines are in operation for roasting: a Probat UG-15, a Giesen W6A, and a Stronghold S7X. He is self-taught as a barista and roaster and has developed his own unique style. In 2021 and 2022, he will be named a renowned roaster by the American coffee media outlet Sprudge for the first time in Japan for two consecutive years.

To balance baking and shop operations, the bakery is open four days a week, Friday through Monday. By maximizing the potential of the ingredients, our goal is to create a pure "beverage" with a pleasant balance of acidity and sweetness.

Our goal is to bring extraordinary experiences into everyday life through coffee, enriching the global environment and people's health.
