A micro-lot of very distinguished Sudan Rume coffee beans has arrived from Campo Hermoso. Led by Edwin Noreña, Campo Hermoso is one of the most innovative coffee farms in Colombia.
Located in Quindío, Colombia, Campo Hermoso is internationally renowned for its pioneering post-harvest processing techniques and unwavering commitment to quality. The owner, Edwin Noreña, is also a CQI (Coffee Quality Institute) instructor and an international judge for COE (Cup of Excellence).
These coffee beans have undergone the farm's unique Enigma Black Honey Mossto Process. After 72 hours of carbonic maceration, the coffee beans are mixed with Mossto (coffee juice), specific yeast, and Enigma hops for an additional 72 hours of controlled fermentation. Subsequently, the coffee beans undergo careful drying and resting to enhance their cleanliness, complexity, and aromatic intensity.
