This is Castillo coffee from the Toulua region of the Cauca Valley province in western Colombia, processed using the washed method.

This batch of coffee was grown by Carlos Torres at his farm in Villa Mariella, at an altitude of 1,655 meters.

Toulua is an inland city in the Cauca Valley province. Previously little known and neither a tourist destination nor an agricultural one, the region was plagued by drug cartel conflicts and instability.

However, with the recovery of local communities, coffee production is quietly developing, and some young coffee growers with innovative ideas are emerging.

Toulua is a region with great potential because it is easy to work with the local community and ensure quality control.

Carlos Torres is one such grower dedicated to coffee production, ensuring consistent coffee quality through meticulous management and selection.

This batch of coffee underwent 24 hours of aerobic fermentation before being refined using the washed process.

This wine has the typical structured flavors of Castillo grapes, with refreshing acidity and pleasant sweetness.

It's not flashy, but it has a balanced flavor that you can drink again and again without getting tired of it, and it's easy to incorporate into everyday brewing.
