Casablanca Farm is located in northwestern Nicaragua, near the Honduran border, nestled in a mountainous region with towering peaks and deep valleys. The farm boasts natural shade forests and abundant wildlife, creating a beautiful and pristine ecological environment.

In 2008, the farm introduced Nicaragua's first Pinhalense (machinery manufacturer) production line and African-style planting beds, and has been committed to improving coffee quality ever since.

Cupping is an important part of quality control and is conducted by Q Grader, a star cupper from the Specialty Coffee Association of America (SCAA).

Farm owner Sergio's goal is to rank first in the COE (Center of Excellence) rankings.

Therefore, he strives to improve the quality of his coffee every day.

In 2012, he ranked tenth in the COE rankings, and in 2025 he will be ranked second.

This batch of coffee is naturally processed Javanese coffee from the El Limón region of the farm.

The Javanica variety was introduced to the island of Java in Indonesia from Ethiopia in the early 19th century, and later spread to Central America. The name Javanica is clearly a combination of Java coffee and Nicaragua.

However, due to its delicate nature and low yield, large-scale cultivation did not begin until around 2000.

In March of this year, I visited their farm, and they told me many stories.

What impressed me most was the shortage of harvesting workers and the impact of climate change on coffee production.

If there aren't enough pickers during the coffee harvest season, the coffee cherries that ripen at their peak in the growing region can't be harvested and will end up remaining on the trees.

To ensure a sufficient number of harvesters, they will obviously bring in foreign workers from neighboring countries, but they say labor costs are rising.

They also worry that climate change will make it impossible to continue growing coffee in areas that were previously suitable for it, and that the timing of the rainy and cold seasons is becoming increasingly unpredictable.

Shockingly, other Central American countries are facing similar challenges.

I believe there will be countless worries and difficulties under any circumstances, but I am more grateful than ever that my products (not just coffee) have been delivered safely.
