We're excited to announce the addition of beans from El Diviso Farm in Colombia to our lineup. This farm is highly regarded within Colombia and has garnered global attention in recent years due to numerous baristas using its products in international competitions.

El Diviso Farm is located in southern Huila, Colombia, and was founded with the aim of exploring new ways to enhance the quality of Colombian coffee. The farm owners, the Lasso family, are dedicated to developing highly traceable and uniquely flavored coffees, continuously experimenting with various microbial processing methods to create cup profiles that are renowned internationally.

About the Variety and Processing:

  • Ombligon Variety: This name comes from the local term for Ethiopian Heirloom. "Ombligon" means "belly button" in Spanish, as local farmers observed that the shape of these coffee cherries was slightly raised, resembling a small belly, hence the name.

  • Fine Processing: The producers select mature coffee cherries with very high sugar content, first sterilizing them with 5% alcohol to remove impurities and unwanted bacteria. The coffee beans are then bagged for 48 hours of initial oxidation, followed by another 60 hours of secondary oxidation, and finally undergo 24 hours of anaerobic fermentation.

Flavor Profile:

This coffee exhibits bright fruity flavors reminiscent of blueberry and pomegranate. It also features the inherent high body and smooth texture of the variety, offering a distinct and balanced complexity.

In order to maximize the flavor and layer of the fruits in the beans, he not only uses high-quality beans cultivated in reputable farms. The coffee beans also deliberately break the Japanese tradition of deep frying, insisting on the exclusively researched shallow frying, so that everyone can taste the delicate and unique coffee taste, and then settle down and enjoy the coffee time in the literary and artistic atmosphere.
