This time, we are delighted to present a specialty coffee meticulously crafted by Rodrigo Sanchez, a prominent producer from Colombia, who once again surprises the world with his highly creative processing method.

Mr. Rodrigo Sanchez is a fourth-generation coffee producer from his family. He currently operates a continuously expanding farm with over 350 employees, making it quite a substantial operation. The most distinctive feature of this farm is its ability to create unique flavors and layers through its self-developed processing techniques.

Mr. Sanchez collaborated with experts in microbiology, chemistry, biology, and other fields to research and develop the special processing method being introduced this time – Citric Natural.
During the processing, citric acid is added to promote lactic acid fermentation, along with ingredients such as citrus fruits (oranges and Dekopon tangerines), lemongrass, and brown sugar made from sugarcane. This mixture ferments for approximately 190 hours.
Afterward, a secondary fermentation of 150 hours is conducted in sealed fermentation tanks, with careful monitoring of Brix and pH levels.

The final result is an impressive flavor profile: aromas of coconut and lemongrass, derived from the processing method, accompanied by a refreshing lime-like acidity and layered fruit notes, making for a vivid yet balanced flavor.
