Aroma Nativo's processing is very rigorous. This Hydro Natural combines anaerobic and re-purification techniques:

  • First Fermentation: Selected ripe coffee cherries are placed in an anaerobic environment for initial fermentation.

  • Second Fermentation: After pulping, specific natural bacteria and yeast are added for a second fermentation (double fermentation), aiming to maximize floral and fruity aromas and sweetness.

  • Stabilization: After drying, the beans enter a temperature-controlled room for a stabilization period of 2.5 to 3 months, ensuring mature flavor development.

This coffee is part of the Veci Project, an initiative launched by Luis Marcelino in 2022 to assist farmers with excellent agricultural techniques but lacking processing equipment. Aroma Nativo purchases these high-quality coffee cherries at a premium price and utilizes its professional laboratory-grade equipment for precise fermentation, creating this "experimental" yet balanced flavor profile.
