El Injerto Farm is located in the village of La Libertad, deep in the valley of Huehuetenango Province in northwestern Guatemala, covering an area of ​​750 hectares (300 hectares of coffee planting area). The area has a cool average temperature of 16-28°C, moderate humidity, annual rainfall of 1,800-2,000 mm, and volcanic soil rich in organic matter.

The farm is very well maintained, the shape of the trees, the strength of the branches, the color of the leaves and the way the fruit grows is great. We pay close attention to the environment, for example using organic compost made from earthworms. The hotel's 350 hectares of natural rainforest support native flora and fauna and provide the perfect climate for the farm.

During the harvest, only ripe red fruits are picked by hand and purified using traditional washing processes. After removing the pulp, the fruit is aged in fermentation tanks for 60-72 hours and then washed with abundant spring water that flows from the mountains. In this way, the parchment, which had become sufficiently sweet, was carefully dried in the patio (drying area).

In addition, the farm has its own dry grinding machine and all processes are carried out in unison. In order to produce high quality coffee, traditional Guatemalan coffee production techniques are used to produce coffee under the owner's in-depth research and management.

The coffee from this El Injerto farm wins the top prize in the Guatemala Specialty Coffee Competition every year and can be said to be truly the top specialty coffee in Guatemala.
