Candelilla is Costa Rica's first-ever "micromill." A micromill is a small, independent processing plant established by coffee farmers next to their own farms, where they personally handle the post-processing and refinement of coffee beans.

Before the widespread adoption of micromills, producers could only sell their harvested coffee cherries to institutions like regional agricultural cooperatives, often at low prices based purely on weight. As transactions were solely based on quantity, the acquisition price was difficult to increase. To break free from this predicament, producers sought to inject more added value into their coffee. They began experimenting with assembling their own processing equipment, taking charge of the entire process from harvesting and refining to selling green beans. With their excellent flavor profiles, they eventually succeeded in selling their coffee at higher prices.

This wave of producers personally handling post-processing to enhance coffee's added value has been hailed as the "micromill revolution," and Candelilla is a pioneer of this revolution.

Roasting is done intentionally so that the beans are transparent and the differences between each bean are clear, retaining their sweetness even after cooling.

Their roasting team purchases unique green beans from various green bean trading companies and roasts them using Probat UG22.Masu at their roastery in Mitaka. Roasted coffee is cupped every week to check its quality and continue to update roasting methods. They share information such as roasting intentions with everyone in the weekly report, coordinate the "taste" of each store every month, and the entire team pursues quality and strives to provide customers with the most delicious coffee.
