Guji coffee was only recently distinguished from neighboring Sidamo and Yirgacheffe coffees.
However, its superior quality and unique flavor quickly gained international recognition.
The Guji region boasts abundant rainfall and steep mountainous terrain, providing ideal growing conditions for various coffee varieties.
After careful hand-picking, ripe red coffee cherries are collected, while unripe cherries are visually removed.
Afterward, the coffee cherries are placed on drying beds, where workers sort them to ensure they dry evenly.
In the early stages of fermentation, coffee cherries are covered with yellow cloth and left to dry for two to three days to promote ripening, and then placed in the sun to dry completely.
The drying process takes approximately nine to twelve days.
The dried coffee cherries are then transported to Addis Ababa, where they are dry-ground in preparation for export.
