This coffee is meticulously crafted by Cafe Nor, a premium exporter from El Salvador. When it comes to the Pacamara variety, its most distinguishing characteristics are its creamy smooth texture and sweet acidity. This captivating flavor profile is best showcased in the highly delicate washed processing method.

The 〈Familia Díaz Pacamara〉 we are introducing today is a masterpiece that exemplifies this "classic Pacamara" flavor, making it an outstanding daily specialty coffee.

This bean was originally included in the March 2026 coffee subscription plan (BDS), but to celebrate 〈Elsalvador Pacamara Week 2026〉, hosted by the Embassy of El Salvador, we made the special decision to urgently release it as a single-origin offering.

About Pacamara Week 2026

"Pacamara Week 2026", held from March 23rd to 30th, is an event that gathers roasters from all over Japan, aiming to allow more people to experience the charm of El Salvador's representative variety - Pacamara. THE COFFEESHOP has participated as a partner for three consecutive years since 2024. I am deeply honored to be so deeply involved with El Salvador and the Pacamara variety, which I personally love and have a deep affection for.

Farm Story: The Persistence of the Díaz Family

The Familia Díaz farm is managed by three brothers: William, Renato, and Santos.

The Beginning: When the eldest son, William, was 16, he inherited a one-hectare plot of land in the mountains of Chalatenango from his father. He began his coffee career by asking neighbors for Pacas and Bourbon seeds to plant.

Training: In 1990, when his father formally engaged in farm operations, 18-year-old William had already mastered the cultivation and processing techniques passed down from neighboring farmers and his family, laying the foundation for coffee production.

Turning Point: With the visit and encouragement of Alejandro Valiente, they began to challenge specialty coffee, experimenting with various processing methods such as honey, washed, and natural. Ultimately, the first harvest of the Pacamara variety was a great success, marking a crucial step towards supplying high-quality coffee to carefully selected clients.

Passion to Overcome Adversity

Currently, they face significant challenges such as managing leaf rust and rising material costs, but they are actively addressing them with dedication and optimism.

Due to the remote location of the farm, vehicles cannot enter. All harvested coffee beans must be processed on the farm, and the dried beans are then transported to the warehouse by horse. Despite such arduous conditions, the Díaz family, working together with their family, continues to produce high-quality specialty coffee with passion.

About THE COFFEESHOP

Although THE COFFEESHOP is located behind the quiet Komaba campus of the University of Tokyo, it still attracts a large number of coffee lovers to come and make a pilgrimage, which shows its appeal. Walking into the store, the open space houses a large American-made coffee roasting machine, allowing you to clearly see the coffee craftsmen roasting beans and hand brewing operations, adding to its charm.
Since opening in 2011, THE COFFEESHOP has only focused on roasting and brewing techniques. The store manager, Daichi Hagiwara, was attracted by the pursuit of delicious coffee and joined in 2016. He quickly won the roasting master team challenge championship in 2018. Here, each coffee bean is carefully selected and repeatedly cupped, allowing you to easily taste the layers and ultimate flavor of coffee!
