This time, we bring you "Premium Crop," a superb Geisha natural process coffee from a country THE COFFEESHOP is very familiar with – El Salvador.
The raw bean importer "coyote," based in Kyoto and specializing in importing and roasting Salvadoran coffee beans, introduced this coffee to us. Our friendship with its founder, Mr. Kadokawa, began even before coyote was established.
Last year, the cupping session for this procurement batch, which included this Geisha natural, was specially arranged at the Salvadoran Embassy. Being invited to the embassy, and even conducting a cupping there, was a very precious and unforgettable experience for us, still fresh in our memory.
All the coffees displayed at the cupping session were exceptional, but the one that captivated us instantly and led us to decide on purchasing it was this Geisha natural, personally crafted by Mr. Oscar Aguilar.
The most astonishing aspect of this coffee is its smooth, dense texture. When you drink it, your mouth feels a viscosity like peach juice, which makes the coffee's overall sweetness more立体 and intense. Last year's batch had this characteristic, and this year's batch clearly exhibits this excellent texture again, which is truly delightful.
Its sweetness is incredibly rich, ranging from fruit to caramel and honey, and it exhibits complex changes with variations in temperature. The comfortable mouthfeel and sweet aftertaste bring immense satisfaction.
Furthermore, we feel that this year's batch has an even more splendid flavor profile than last year's. Particularly, the elderflower-like sweet floral aroma at high temperatures and the delicate cantaloupe-like flavor that emerges after cooling are surprises we only captured for the first time this year.
By continuously sourcing coffee from the same farm, we can savor the subtle flavor changes between different years, which is where the joy lies. Based on this wonderful experience, he has also become a producer we aspire to visit in person someday.
This batch originated in the El Túnel area, in the mountains of La Palma, Chalatenango province, northwestern El Salvador. Although it is mainly composed of small farmers, it gathers many excellent and high-quality farms.
The producer, Oscar, is the nephew of the legendary coffee farmer Rene Aguilar, famous for promoting the Pacamara variety in the region. With Mr. Rene's full support, Oscar has been able to consistently produce high-quality coffee since he was young. This Geisha was harvested from a micro-lot planted about 8 years ago, and now the coffee trees' roots are deeply embedded in the soil, successfully bringing out extremely bright and clear flavor characteristics.
Although traditional natural processing is used, thanks to the extremely high altitude of the processing plant and the cold climate at night, during the initial drying phase when the moisture content is still high, the coffee cherries undergo a slight natural fermentation. This is precisely the key factor in creating its complex layers of flavor.
