This coffee boasts a bright, sweet aroma reminiscent of muscat grapes and the flavor of black tea, with a smooth and pleasant mouthfeel and a long finish. It also possesses the acidity characteristic of the Sidama region.

This is one of the many samples we selected during our visit in January this year. The Shantawane washing station is a production and processing facility that has been directly operated by local exporter Tracon since 2022. It is located in Sidama, Ethiopia's most popular coffee-growing region.

The region boasts excellent terroir, and in recent years, many of its coffee products have won awards at international coffee competitions held in Ethiopia.

The coffee is made from coffee cherries picked by about 1,000 small coffee farmers in the surrounding area, many of whom grow their plants at an altitude of over 1,950 meters.

They cultivate varieties selected by the Jima Agricultural Research Centre (JARC) as well as local varieties from their own farm.

In addition to the traditional washed and natural types, Shantawane WS also employs various screening processes, such as honey treatment and anaerobic treatment. Despite an average annual production of 6.5 containers (approximately 117 tons), the company remains actively committed to improving product quality.

During our procurement visit, they enthusiastically introduced their efforts to improve drying quality.

townsfolk coffee is located in the center of Kanazawa, right in front of a lush park. Large windows offer views of the city and changing seasons.

The owner accumulated work experience in specialty coffee shops in Tokyo and Copenhagen, Denmark, and opened this store in July 2020. They only produce high-quality coffee with unique flavors, and they strive to blend the best of Japan and Denmark to deliver delicious coffee.

Scandinavian coffees tend to get the spotlight for being lightly roasted, but they excel at recognizing the potential of each coffee and creating flavors that express it in the most appealing balance possible. At townsfolk coffee, they follow Nordic roasting methods to create authentic Nordic roasted coffee with a taste that even Japanese people can easily relate to.
