It exhibits a refreshing and bright flavor profile reminiscent of navel oranges, accompanied by a natural sweetness that evokes maple syrup. As the coffee cools, notes of black cherry gradually emerge. This is an exceptional lot that perfectly showcases the most captivating flavor characteristics of the Pacas variety.
The farm is located in the Santa Barbara region, a renowned and pivotal area among Honduran coffee-producing regions. This area not only holds the most COE (Cup of Excellence) awards in Honduras but is also recognized for having the country's finest terroir. In particular, the Pacas variety grown in this region often possesses excellent acidity and rich flavor layers, making it highly sought after by green bean buyers worldwide.
At Yerin's farm, after harvesting, the coffee cherries are first de-pulped and then immediately undergo a 20-hour dry fermentation. After fermentation, the coffee is thoroughly washed four times with water, followed by a 48-hour soaking in clean water. Finally, the coffee beans are transferred to a parabolic solar dryer for approximately 18 days of meticulous drying, during which defective beans are manually removed to complete this exquisite washed lot.
