【Yeast Fermentation Washed Process】

Initial Sorting and Cooling: Coffee cherries are washed to remove lower-density, inferior fruits. The selected high-quality cherries are then cooled to 10°C to stabilize microbial activity.

First Stage Fermentation: After pulp removal, the mucilage is retained, and the cherries are placed in open water tanks for 12 to 24 hours of fermentation.

Precise Fermentation Control: Subsequently, they are transferred to sealed tanks, inoculated with specially selected yeast strains, and undergo closed fermentation with precise temperature control.

Washing and Drying: After fermentation is complete, the beans are thoroughly washed and dried until their moisture content reaches 10% to 12%.
Flavor Profile
It exhibits a gentle, ripe sweetness reminiscent of white peach and grape, accompanied by a rounded, smooth mouthfeel like almond tofu and milk tea.
