Paraiso 92 is a family-run farm with its own microbiological laboratory, quality control laboratory, and processing plant, consistently producing unique and unprecedented coffees.

The farm owner, Wilton Benitez, is both a coffee producer and a researcher with 16 years of experience in coffee microbiology and chemical composition. He is passionate about technology, biotechnology, and the development of new equipment, and is dedicated to researching fermentation processes.

Under his leadership, this particular batch of coffee undergoes a double sterilization process using ozone water and UV light after harvesting. Subsequently, the coffee cherries are placed in a bioreactor at 18℃, where Saccharomyces yeast is added for approximately 52 hours of anaerobic fermentation. After fermentation, the cherries are de-pulped and undergo a second anaerobic fermentation at 21℃ for about 48 hours. The coffee beans then receive thermal shock treatment with 40℃ hot water and 12℃ cold water, followed by mechanical drying for approximately 36 hours.

GLITCH COFFEE & ROASTERS' main store is located in Jimbocho, an area filled with old bookstores and coffee shops. The owner of GLITCH COFFEE, who is both a barista and a roaster, is Mr. Kiyokawa Suzuki, the 2014 AeroPress Japan champion. To bring out the fruity flavors and layers in the beans to the extreme, he not only uses high-quality coffee beans cultivated by highly reputable farms but also deliberately breaks the Japanese tradition of dark roasting, insisting on mainly using his exclusively researched light roasting method. This aims to allow everyone to taste coffee with subtle and unique flavors, and then to settle down and enjoy their coffee time in the artistic atmosphere. It's no wonder that within just a few years of opening, it was selected among the top fifty best cafes in Asia by The Big7 Travel in 2019.
