PHILOCOFFEA 213 GUATEMALA El Injerto Traditional Washed
El Injerto Farm is located in the village of La Libertad, deep in a valley in Huehuetenango province in northwestern Guatemala. The farm covers an area of 750 hectares, 250 hectares of which are dedicated to coffee cultivation. The area has a cool climate, with average temperatures of 16-28°C, annual rainfall of 1,800-2,000 mm, and moderate humidity. The volcanic soil is rich in organic matter and the unique dry season ensures even flowering and ripening, resulting in coffee with excellent acidity, body, flavor and delicate wine-like aroma.
The farm is carefully maintained and the trees are in good condition with lush branches, healthy leaves and good fruit shape. We take great care of the environment, including using organic compost produced by earthworms. In addition, 470 hectares of natural rainforest on the farm protect native flora and fauna and provide the farm with an optimal climate.
At harvest, only fully ripe cherries are picked by hand and then processed in a traditional washing process. After depulping, the beans are fermented in tanks for 60-72 hours and then washed with abundant mountain spring water. Parchment coffee is rich in sweetness and carefully dried on the terrace.
The farm also has a unique dry grinder, ensuring complete control of all processes. Under the careful research and management of the owners, the coffee produced follows traditional Guatemalan coffee production techniques, resulting in a truly unique flavour.

This time, we aimed for a sweet finish and achieved a medium roast through a slow and careful process. First, you'll experience a rich sweetness that's reminiscent of dark honey. It then transitions into a soft sweetness similar to walnuts and caramel, with a hint of fruity notes like grape. The texture is creamy and leaves a sweet aftertaste after eating. The balance between acidity and sweetness is pleasing.
