The coffee, produced using an innovative process, has arrived from the most talked-about farm in Milan, Colombia, and is used by the Barista World Championship finalists.

Milan Farm is located in the Andes Mountains, in the Risarald province, with hot springs and volcanic soil stretching from 1,400 to 1,800 meters. We produce a variety of micro lots, as well as bananas (green bananas), corn, and beans.

The coffee process introduced this time involves cherry picking, sorting, and beating, then transferring to tanks for fermentation as parchment coffee. Nitrogen and yeast are introduced into the tanks, and fermentation proceeds for four days under strict temperature control. The addition of nitrogen further accelerates fermentation. The coffee is then washed with water and naturally dried for approximately 20 to 30 days.
