Nigusse Gemeda, the producer that won first place in the 2020 Ethiopian COE competition, is launching a new coffee bean.
Mr. Nigusse Gemeda, who produces coffee in Sidamo, Ethiopia, has been attracting attention from buyers and roasters around the world since he won first place in the inaugural Ethiopia COE in 2020.
The term "anaerobic" in the purification method used this time has the meaning of "anaerobic" or "performed in the absence of oxygen". Anaerobic fermentation is more difficult because it requires a closed environment and strict control of fermentation time and temperature, but it is a method for producing unique flavors. The batch undergoes 36 hours of anaerobic fermentation and is then sun-dried on African raised beds for 18 days. This results in a juicy, berry-like, unique flavor.
