The Discovery Purely out of curiosity, we attempted to apply an espresso roast profile to El Morito’s Yellow Caturra. The results were nothing short of astonishing! This experiment completely unlocked a distinct side of this coffee, elevating it to a richer, more profoundly aromatic dimension, setting it entirely apart from our usual "Omni-roast" style.

Even on the cupping table, the remarkable cleanliness and the full-bodied, multi-layered tactile complexity revealed by this roast profile left us stunned. This creation was simply too incredible to keep to ourselves – it’s a unique roasting interpretation that we sincerely hope to share with everyone.

The Tasting Experience This exclusive roast profile transforms the exotic character of Yellow Caturra, bringing richer fruit notes and refined aromatic expression:

Brewer's Note: If our "Omni-roast" highlights the pure high-altitude terroir of the estate, then this "Espresso Roast" delivers an exceptionally rare, tactilely rich, and beautifully structured espresso flavor.

Thanks to the coffee's extremely high solubility, even with such dense, high-altitude beans from artisanal producers, you can successfully extract it using classic espresso ratios (1:2, for example, 18g in, 36g out) – an extremely rare brewing experience in the industry. For coffee enthusiasts eager to discover a new facet of El Morito, this is absolutely the perfect choice.

Degassing Method

We recommend a minimum 30-day degassing period for this coffee. Our coffee products typically reach their peak flavor around day 45.

About Apollon's Gold

Apollon's Gold originated in Tokyo. Since 2019, they have been continuously updating their roasting and extraction techniques based on feedback from customers, many coffee expert friends, and cooperative farms. They particularly focus on showcasing the uniqueness and diversity of coffee varieties and origins. They always pursue flavors that convey the characteristics of different origins and the individuality of the varieties. Special emphasis is placed on relationships with producers, sourcing beans directly from many of the same producers each year. In addition, they process only green coffee beans suitable for drinking according to each harvest season, thus achieving a rich and diverse range of coffee varieties in addition to the main origins.

Apollon's Gold's Caffeine is known for its unique all-purpose roast (suitable for both espresso and pour-overs). The beans are lightly roasted in appearance, but our coffee can be enjoyed whether it's pour-over or espresso, or even an AeroPress, Moka or Turkish coffee pot. At Apollon's Gold Kitanomaru, they serve the same roasted beans used to make espresso. From green bean procurement, roasting to quality control, all processes are completed at the headquarters in the city center. They only sell beans that pass strict inspection by their QC team.

The manager, Mr. Wilderness Jialong, is keen to explore the possibility of various bean flavors between light and very light roasting, giving them a rich and clean taste, which can relatively highlight the rich floral and fruity aroma.
