The palate is well-balanced, with a refreshing, light fruity flavor and a sweetness that supports it. The fruity flavor is crisp like an apple, with a subtle sweetness and tartness like biting into a raisin. I think the light texture backed by the light sweetness and clean liquid makes it an easy coffee to enjoy every day.
"Hunapu" means "mountain flower" in Quiche, one of the indigenous languages of Guatemala, and is also the indigenous name of the Agua volcano located near the city of Antigua. At the foot of the volcano, there is a wet/dry grinder called "Veja Vista" that processes harvested cherries into dry parchment. Coffee processing facilities like Bella Vista are called "beneficios" in Spanish. Unapu owns a small plot of land on the slopes of Agua Volcano, where the coffee grown by 500 small producers is collected and batched. In addition to traditional bourbon, Caturra and Catuai are also grown in the area.
The history of coffee in Guatemala dates back to the 1700s. Originally introduced as a garden plant by Jesuit priests, it was also eaten by foreigners, but does not appear to have been grown commercially until the 1850s. It was internationally praised as "the best coffee in the world" at the 1888 Paris World's Fair and the 1915 San Francisco World's Fair, and the Guatemala National Coffee Association (Anacafé) was established. The National Coffee Association of Guatemala (Anacafé) was founded in 1960 to provide technical assistance and education to coffee producers. This enables farmers to learn how to grow coffee and know how to improve its quality. We also offer extension services such as soil, water and foliar analysis to help growers get the right nutrients and fertilizers, and sensory analysis to provide feedback on samples submitted by growers.
Almost all coffee produced in Guatemala is Arabica.
Coffee production ranks among the top 10 in the world, but production has been declining compared to about 10 years ago.
Guatemala's coffee quality is world-renowned, and it is also known as the first country in the world to establish an origin labeling system that distinguishes eight production areas. Guatemala is known as a pioneer in specialty coffee production, and in 2018, coffee production was recognized by the government as an "intangible cultural property."
