Peru is known as the third largest coffee producer in South America after Brazil and Colombia. It was once recognized as a producer of organic certified coffee and fair trade coffee, but the quality of these coffees was not very high. However, it is currently gaining attention as a source of high-quality organic coffee.
Peru has a long history of coffee cultivation, dating back to the 18th century. The country is diverse, with altitudes ranging from 400m to 4,500m, and climates that vary by region and terrain. These climates, called microclimates, create unique coffee flavors in each growing region. Because of this rich environment, you'll find coffee in Peru with a variety of personalities, from flavors of red fruit, wine, and exotic spices to flavors of floral, citrus, and sweet chocolate. Traditionally organic farming has been used, and the pursuit of environmentally sustainable coffee production can be said to be one of the ideals pursued by modern specialty coffee.
The Pamfilo Adriano Zurita farm is located in the San Pedro region of Tabacanas, San Ignacio state. His three farms: La Breva, La Caña and El Guataraco, are named after the native birds and plants that live in the forests of the San Pedro Mountains .
Pamfilo is passionate about growing coffee on 2 hectares of land, focusing on the Pace, Mundo Novo, Caturra and Catimor varieties. In 2020, he joined the Cedros cooperative and became part of a network of professional producers.
The Cedros cooperative was established on May 10, 2013 in the Cajamarca region of northern Peru. Composed of approximately 300 members, the cooperative improves its members' access to public and private financing, actively works to develop niche markets, and contributes to the national and international coffee social movement.
Cedros Café supports its members by offering bonuses based on cup quality, providing key farm infrastructure such as solar dryers, and installing advanced post-harvest processing equipment such as pulpers and fermenters. The cooperative is committed to improving the quality of cups through various measures and practical training.
To ensure transparency in prices, premiums, refunds and other forms of support, Cedros promotes consensus through democratic and transparent membership meetings. Profit sharing is approved by the collective and then distributed based on consensus.
