These passionate coffee producers have broken the framework of traditional varieties, expanding the value and possibilities of coffee through unique fermentation techniques, and continuously making new attempts.

The batch that just arrived also uses this processing method. "Culturing" refers to a fermentation process that utilizes an environment filled with specific microbial populations, known as "starter cultures," to ferment, thereby imparting new flavor variations to the product.

The starter cultures are mainly yeasts extracted from the fermentation of fruits such as pineapples. When fermenting coffee cherries, producers carefully adjust their type, dosage, and fermentation time to precisely sculpt the desired flavor profile.

The main branch of GLITCH COFFEE & ROASTERS is located in Jimbocho, an area famous for its many used bookstores and cafes. Amidst this strong literary atmosphere, the shop's decor, using only wood and metal, creates a simple yet rustic style that draws people in. Although the interior space is not large, with half of it occupied by a massive coffee roaster, it is precisely this setup that conveys the owner's dedication to coffee roasting.
The owner of GLITCH COFFEE, Mr. Kiyokazu Suzuki, is both a barista and a roaster, and was the 2014 AeroPress Japan Champion. To bring out the fruity flavors and layers within the beans to their fullest, he not only uses high-quality coffee beans cultivated by highly reputable farms but also deliberately breaks with Japan's traditional dark roasting method. He insists on his unique research-based light roasting, aiming to allow everyone to taste subtle yet distinctive coffee flavors. Then, amidst the artistic ambiance, people can settle down and enjoy their coffee moment. It's no wonder that within just a few years of opening, the shop was selected as one of The Big7 Travel's Top 50 Best Cafes in Asia in 2019.
