Coffee using an innovative process has arrived from the Milan farm in Colombia, which is currently the most talked about, and is used by the finalists of the Barista World Championship.

The Milan farm is located in the Andes Mountains in the province of Risarald, where hot springs and volcanic soil stretch from 1,400 to 1,800 meters. We produce a variety of micro-lots, as well as crops such as bananas (green bananas), corn and beans.

The coffee process introduced this time is to pick cherries, sort them, beat them, and then transfer them to tanks for fermentation as parchment coffee. Put nitrogen and yeast into the tank and ferment for 4 days under strict temperature control. Adding nitrogen will further speed up fermentation. Then, wash with water and dry naturally for about 20 to 30 days.
