The brand name "LEAVES" reflects our desire to grow while constantly trying new things, just like a leaf that has completed its role falling from a branch and becoming nourishment for new leaves.
LEAVES COFFEE ROASTERS representative and roaster Yasuo Ishii is a former professional boxer who was born in Fukagawa City, Koto-ku, Tokyo. He has been working in the catering industry for 20 years since he was a teenager, and has experience in restaurant management, guidance, and consulting. In 2010, a cup of coffee from an acquaintance opened the door to a new world for him. LEAVES COFFEE APARTMENT was opened in 2016. In January 2019, we opened a roastery called ROASTERS. Currently, three machines are running for production roasting: Probat UG-15, Giesen W6A and Stronghold S7X. He taught himself to be a barista and roaster and established his own unique style. In 2021 and 2022, he will be selected as a famous roaster by the American coffee media "Sprudge" for two consecutive years for the first time in Japan.
In order to balance baking and store operations, the bakery is open three days a week on Saturdays, Sundays and Mondays. By maximizing the potential of our ingredients, we aim to create a clean "drink" with a pleasing balance of acidity and sweetness.
