This special lot comes from Las Flores farm in Huila, Colombia, managed by Mr. Juan Vergara. Mr. Juan is known for his innovative fermentation and drying techniques and is one of the most prominent producers currently active at the forefront of specialty coffee. The farm began in 1990 and started transitioning to specialty coffee in 2006. Today, it is renowned for cultivating rare varieties such as Sidra, Wush Wush, and Pink Bourbon.

For this lot of Bourbon Sidra Natural, fully ripe coffee cherries are carefully selected and dried directly with their pulp intact, maximizing the rich flavors derived from the fruit. After harvesting, the coffee cherries are meticulously sorted, then spread evenly on African drying beds and slowly dried under strictly controlled temperature and humidity. During this process, the sugars from the pulp transfer into the coffee beans, creating a complex and rich sweetness and aroma.

Throughout the drying process, workers regularly turn the coffee cherries, taking great care to prevent over-fermentation to maintain a clean flavor. The resulting cup profile, crafted with such meticulousness, perfectly combines the characteristic splendor and clarity of the Natural process.

The most impressive aspects of this coffee are the silky, creamy mouthfeel unique to the Sidra variety and the elegant aroma reminiscent of lemon myrtle. In terms of flavor, juicy peach, sweet and sour plum, and star fruit with a bright acidity are perfectly blended, accompanied by a lingering, elegant aftertaste.

All the coffee beans we sell and blend have a SCAA rating of 80 or above, which is the same quality level of specialty coffee beans, accounting for only 5% of the total coffee beans produced and distributed globally.

We source the highest quality, carefully selected coffee beans and roast them in small batches in-store in a Nordic style to extract the fresh, authentic and fruity aroma of the beans and maximize sweetness.
