La Loma Farm in Pitalito, Huila, Southern Colombia, was established by Rodrigo Sánchez Valencia, the owner of the renowned Monteblanco Farm. It serves as an important base for his experimental coffee creations.

Since taking over in 2011, this farm has not only been a cultivation site but also a "laboratory" dedicated to researching varieties, fermentation, drying, and processing design. Among Rodrigo's many farms, this is the iconic place where he experiments with new processing methods and refines them to perfection.

What we bring to you today is a very unique lot from La Loma Farm – X.O Rum Barrel Washed.

The biggest highlight of this coffee lies in its unique processing technique, which combines fermentation with barrel aging. The team selected highly sweet Caturra and Bourbon varieties. First, microorganisms were cultivated in a culture medium infused with rum, then injected into peeled coffee beans for a long period of sealed anaerobic fermentation. After drying, the coffee beans were placed into oak barrels previously used for aging rum for secondary aging. Through this process, complex and aromatic notes, unobtainable through traditional washed processing, were successfully brought out.

This coffee perfectly embodies Rodrigo's signature precise flavor design, seamlessly blending strong character with exceptionally high cleanliness.

When brewed, the first thing that hits you is the rich aroma from the barrel, with deep alcoholic notes reminiscent of whiskey and dark rum. This is followed by intense fruit flavors like black cherry and a silky sweetness similar to vanilla. The aftertaste offers subtle layers of ripe fruit and wood, lingering long in the mouth.

This is a luxurious creation that is both grand yet understated, worthy of quiet contemplation to appreciate its depth and layers. We also use this bean for espresso in our shops. Especially when paired with milk, the sweet and aromatic rum notes are further amplified, creating a magnificent Latte experience akin to a delicate dessert. We highly recommend trying it.

All the coffee beans we sell and blend have a SCAA rating of 80 or above, which is the same quality level of specialty coffee beans, accounting for only 5% of the total coffee beans produced and distributed globally.

It involves quality control of farm areas, producers, countries of origin, growing methods, harvesting, production processing, distribution routes, sorting and all parties involved in creating a specialty coffee supply chain.

We source the highest quality, carefully selected coffee beans and roast them in small batches in-store in a Nordic style to extract the fresh, authentic and fruity aroma of the beans and maximize sweetness.
