The Tocto family has been cultivating coffee for over 60 years in the El Porvenir region, at an altitude of approximately 1,600 meters. Their farm covers about 10 hectares and primarily grows Bourbon, Caturra, Pacamara, and Catuai varieties. The Tocto family places great emphasis on land management, carefully tending to the ripening and harvesting of coffee while also cultivating crops such as corn, plantain, and cassava to maintain ecological and environmental balance.

This tradition was originally established by Serafín Tocto and Cristina Peña, and has been inherited and continued by the next generation—Rody, Delmira, Noe, and Joel. As members of Aromas Del Valle , founded in 2015, they have benefited from modern drying facilities, technical support, and financial resources, enabling them to further improve processing methods and enhance coffee quality.

The Tocto family's farm names include "Los Mangos", "Gema de la Montaña", "El Coco", "El Pozo" and "El Balsas", all taken from the local natural landscape and geographical features.

Aromas Del Valle, owned by the Tocto family, is located in the Cajamarca region of northern Peru. The organization transformed from an association into a cooperative in 2021. Currently, it has approximately 300 members and aims to enhance member representation, promote greater producer participation, and improve access to funding. Its goal is to develop niche markets and actively participate in social movements within the domestic and international coffee industry.

Their roasting team purchases unique green beans from various green bean trading companies and roasts them using Probat UG22.Masu at their roastery in Mitaka. Roasted coffee is cupped every week to check its quality and continue to update roasting methods. They share information such as roasting intentions with everyone in the weekly report, coordinate the "taste" of each store every month, and the entire team pursues quality and strives to provide customers with the most delicious coffee.
