LIGHT UP COFFEE LA CANDELILLA - COSTA RICA (SOFT)

Regular price HK$160.00

Fruity aromas of apricots and red apples and the sweetness of country biscuits are delightful, with lingering hints of Ceylon tea.

LIGHT UP COFFEE "Costa Rican Candelilla" which I will continue to purchase every year. This is Costa Rican coffee that we can wholeheartedly recommend, and the quality continues to improve every year.

I purchase this coffee every year and this season will be my seventh. In 2018, the wet grinder (washing equipment) was fully updated, with improved transparency, brighter acidity, stronger fruitiness, and more elegant sweetness.

Candelilla means firefly in Spanish, the official language of Costa Rica. The refinery got its name from the crystal clear water where fireflies live.

At around 5 pm that evening, coffee cherries harvested from nine surrounding farms were transported to this refinery, where they were carefully sorted and refined.

Candelilla Refinery has been improving every aspect of the refinery, from water quality to harvesting to equipment. The quality of the people who pick the coffee (called "pickers") has also improved, and the precision of the picking has improved, ensuring that only the highest quality coffee is picked.

Their goal in sourcing and baking is to do both at the same time. Roasting is done intentionally so that the beans are transparent and the differences between each bean are clear, retaining their sweetness even after cooling.

Their roasting team purchases unique green beans from various green bean trading companies and roasts them using Probat UG22.Masu at their roastery in Mitaka. Roasted coffee is cupped every week to check its quality and continue to update roasting methods. They share information such as roasting intentions with everyone in the weekly report, coordinate the "taste" of each store every month, and the entire team pursues quality and strives to provide customers with the most delicious coffee.
