"Las Perlitas" is a collection of high-quality micro-lots of coffee produced in small farms located at altitudes between 1,600 and 2,000 meters. "Las Perlitas" means "little pearl" in Spanish. As its name suggests, the project aims to ensure that the efforts of coffee producers who produce small quantities of exceptionally high-quality coffee are not overlooked.

In Colombia, there are many small-scale producers who, even on a small scale, can produce excellent coffee of quality that surpasses that of large batches. However, due to limited production, they often cannot form separate export batches. To bring these "hidden gems" to the world, "Las Perlitas" rigorously selects coffee based on cupping scores and flavor profiles, then consolidates them into a single export batch.

The most distinctive feature of "Las Perlitas" is that it ensures that the efforts of every producer are reasonably rewarded and ultimately delivered to roasters and coffee lovers.

Producers carefully select only ripe coffee cherries, which undergo a first 24-hour fermentation. After removing the pulp, a second fermentation lasts 36 to 72 hours. Once finished, the coffee beans are washed and typically dried on a sun-drying platform.

Their roasting team purchases unique green beans from various green bean trading companies and roasts them using Probat UG22.Masu at their roastery in Mitaka. Roasted coffee is cupped every week to check its quality and continue to update roasting methods. They share information such as roasting intentions with everyone in the weekly report, coordinate the "taste" of each store every month, and the entire team pursues quality and strives to provide customers with the most delicious coffee.
