LIGHT UP COFFEE NYAGISHIRU - BURUNDI (JUICY)

Sale price HK$180.00

A delightful coffee with highly ripe fruity flavors and a refined, soft sweetness. The sourness of red grapes and oranges and the sweetness of strawberry chocolate gradually spread, and the aroma of cocoa beans lingers.

Nyagishiru WS is located in Muyinga, northeastern Burundi. Although Muyinga coffee production is large, the number of WS is small, and it is considered to be an area with great potential in Burundi. It is located near the Ruvoub National Park and the Ruvoub River, and there is a hill called Nyagishir, which is where the name WS comes from. More than 7,000 bourbon trees are planted on Nyagishir Mountain, and coffee cherries are harvested from 12 adjacent mountains surrounding WS. The relatively flat terrain makes it an ideal environment for harvesting and refining. We also have collection points along each route, allowing farmers who live far away to have their coffee cherries delivered to them without having to travel far.

Initially, until 2014, Nyagishiru WS produced semi-washed coffee for commercial use and the only facilities available were warehouses and drying beds. However, since we started crafting no-rinse coffee in 2015, we have been reborn as WS, producing quality coffee. In 2017, we started producing natural process batches, which are currently undergoing careful purification to improve quality. Based on Burundi’s weather cycles, we extract more natural products in the first half of the harvest season and the second half of the harvest season when temperatures are higher, and more no-wash products in the middle of the harvest season and when the weather is erratic.

The coffee cherries delivered to WS are first put into a floating tank and separated into sinks and floats. We then spread them out on beds, sort them by hand and weigh them. It is then dried on the African bed for an average of 30 days.
