Coffee with a distinctly fruity aroma. The fragrance features notes of Japanese mandarin, white peach and cherry, with the freshness of white grape creating a sense of unity. The subtle sweetness and floral aroma of milk chocolate linger long into the aftertaste.

This coffee is produced by Niguse Gemeda Muge, winner of the 2020 Cup of Excellence. The Santaven Drying Station is located in Bensa Santavin Village, Sidama Region, Ethiopia.

Shantawene DS is located in Shantawene Village, Bensa, Sidama Region, Ethiopia. At this DS, we only own African drying beds, in sufficient quantity to allow us to maintain quality control. I was impressed by the number of people working hard in the small drying area.

We select and accept only fully ripe cherries grown by nearby small-scale producers. Due to the cool surrounding environment of Shantawene DS, it takes approximately 20 days to dry. Stir several times a day to slowly reduce the moisture content.

Their roasting team purchases unique green beans from various green bean trading companies and roasts them using Probat UG22.Masu at their roastery in Mitaka. Roasted coffee is cupped every week to check its quality and continue to update roasting methods. They share information such as roasting intentions with everyone in the weekly report, coordinate the "taste" of each store every month, and the entire team pursues quality and strives to provide customers with the most delicious coffee.
