The sake brewer is Izumashi Sake Brewing Co., Ltd. located in Ebina City, Kanagawa Prefecture, with a history dating back to 1996.
They adhere to the belief that "wine-making begins with rice planting" and implement a complete set of wine-making techniques starting from the planting of rice for making wine. We pay attention to traditional sake brewing and finish it carefully using old-fashioned methods and techniques. He carefully evaluates the soil, the personality of the producer and the characteristics of the rice and reflects this in his handiwork. The result is sake with a natural, rich flavor.

We use 100% junmai ginjo sake "Aya~Irodori~" brewed from Yamada Nishiki, Kanagawa Prefecture.
By using the traditional bagging method to collect the droplets that fall due to the weight of the alcohol, the taste of sake allows you to fully experience the aroma and flavor.

By soaking green coffee beans in the fragrant and gorgeous "Irodori" for a week to a month, you can enjoy the sweetness, umami, and coffee flavor of the koji unique to Japanese sake.
