FUGLEN COFFEE AA GITHEMBE / KENYA
Kenya has two harvest seasons: the main season (October to December) and the secondary season (May to July). We always source beans from the main season.
The main season coffee beans bloom from February to March, and the coffee beans are available from January to April of the following year.
At the Githembe factory, the coffee beans are hand-picked at perfect ripeness and thoroughly washed.
After the skins are removed, the raw parchment is coated with a sticky liquid called pectin, composed of natural sugars and alcohol. This pectin significantly affects the coffee's sweetness, acidity, and overall flavor, creating a pure, rich fruit aroma like AA Githembe. After fermentation, the parchment is soaked in another container filled with fresh water drawn from the Sa'irika River for 16-18 hours. The beans are then graded and given an additional soaking before drying.
